Hovis sighting! Like the song says...two out of three ain’t bad.
Got to spend some time with KC Chocolatier Christopher Elbow today. Chris was kind enough to let me taste a raw cacao seed. The pulp surrounding the inner seeds was sweeet and tart; citrus-like. The inside of the seeds are dried, fermented, roasted, and winnowed. Then the beans are ground, conched, and finally combined with sugar and milk powder before becoming the chocolate we all love.
